GF/DF Chocolate Mug Cake with Homemade Caramel Sauce

This will take you only 5 minutes! (very dangerous, way too convenient). If you are reading this then you don't want to waste time reading about how my grandma passed down this recipe on the back of an old napkin (she didn't), or a sad, and incredibly detailed story about how chocolate mug cake came to me in my darkest hours (untrue, it comes to me at all hours). My friend, you are making a mug cake - time is of the essence!

This recipe works with alternative milks - I use coconut, and is also extremely customisable. If you don't want to put in extra chocolate, that's fine! If you want to have sorbet on top instead of icecream, well, weird but you do you. If you want to lace it with rum, can't say I've tried it but give it a whirl. If you don't want to have a mug cake at all, thats completely ok but why are you here. Let this mug cake be a reflection of your soul. They are meant to comfort. I N G R E D I E N T S


For Mug Cake


  • 4 Tbsp GF flour

  • 2 1/2 Tbsp sugar

  • 2 Tbsp cocoa powder

  • 1/2 tsp baking powder

  • 5 Tbsp of milk or milk alternative

  • 1 Tbsp vegetable oil

  • Ice cream, or dairy free ice cream

  • Handful of chopped dark chocolate (optional)

  • Whipped cream (optional)


For Salted Caramel Sauce (optional)


  • 90 grams butter

  • 1 cup of sugar

  • 1 tsp vanilla essence

  • 1 tsp salt (plus more to taste)



M E T H O D


  1. To make the salted caramel sauce: melt butter in a sauce pan and then add sugar. Bring to boil for 3 mins, stirring constantly.

  2. Take off the heat and add salt and vanilla.

  3. Let it cool slightly before serving.

  4. To make the mug cake: combine the gluten free flour, sugar, cocoa, baking powder, coconut milk, and oil. Mix together until smooth.

  5. Stir in a handful of chopped dark chocolate.

  6. Place in microwave for 1:30-2 minutes on high. When its done it should still look a bit runny, not cooked solid. We want that gooeyness. It might take a couple of tries to get right, depending on your microwave

  7. Serve immediately with icecream, cream, grated chocolate, salted caramel sauce, and whatever else you feel like! Enjoy, then make another.
