Apricot and Sriracha Meatless Meatballs

Serves 2. Takes 35 mins.


A little spicy, a little sweet, these meat(less)balls have a bit of everything. A very quick recipe to whip up and serve with potatoes or rice, and greens thats sure to impress. Seriously, its so simple but so full of taste, it will become a recurring favourite. You can easily make this with actual meat as well, you just need to slightly adjust the mixture and include and egg + half a cup of gluten free breadcrumbs.

Meatless mince

There are plenty of varieties of meatless mince in the U.K. however many of them contain wheat. The most common meatless minces that you will find that are gluten free will be The Meatless Farm Co. and Quorn. Both are available in most of the chain supermarkets in the U.K. Some other brands you could try include Clearspring, Beyond Meat, and Neals Yard. I generally reach for Meatless Farm because it's easy to shape and tastes great.



I N G R E D I E N T S


For the meatballs

  • 400 grams meatless mince (I use Meatless Farm co.)

  • 1/2 brown onion (finely diced)

  • 3 cloves of garlic (diced or minced)

  • 3 Tbsp of Sriracha sauce

  • Salt and Pepper

N.B. if you would like to make with with real mince, add an egg to the mixture and half a cup of breadcrumbs - it will help hold the meatball together.


For the glaze

  • 1/2 cup of apricot jam

  • 1/4 cup of gluten free soy sauce

  • 2 Tbsp of sriracha


M E T H O D

  1. Combine the mince, onion, garlic and sriracha in a bowl and season generously.

  2. Mix together with your hands, roll into balls.

  3. Place on a baking tray and place into oven at 180°celcius on bake.

  4. Cook for 20 minutes.

  5. While the meat(less)balls are cooking, make the glaze by combining the apricot jam, gluten free soy sauce, and sriracha. Mix until combined.

  6. After 20 minutes, take the meat(less)balls out and spread the glaze over them

  7. Return to oven for 5-10 minutes.

  8. Serve with whatever you like. Goes well with rice and greens.
