Gluten Free Breaded Tofu

Here's my recipe for delicious gluten free and vegan breaded tofu, some of my favourite things for a summer platter. I love to serve this with my 4-Ingredient Satay Sauce, which you can find the recipe for that here! This recipe is super easy, you only need is gluten free breadcrumbs (easy to make yourself - will pop the method below), paprika, gluten free flour, vegan mayo, and of course - tofu!

Gluten Free Bread Crumbs

It's super easy to make your own gluten free breadcrumbs as annoyingly, these can be a little difficult to get hold of in supermarkets. Fortunately, they are extremely easy and far cheaper to make at home. For this recipe I use 3 large slices of gluten free/vegan bread (like Schar). All you need to do is toast them, (or grill in the oven if you don't have a special gluten free toaster) and then blend them until crumbed. If the breadcrumbs aren't as crunchy as you'd like, you can spread them onto a baking tray and grill them for a further 5 minutes.

The Process

Let's set up the dipping station first. There are three sections, the flour and paprika mix, the vegan mayo, and the bread crumbs. You might be asking, what's with the mayo?! Great question, I learnt this we trick a few years a go, to use this as a replacement binder for egg. So if you are wanting to bread something, but what to make sure it's vegan - use vegan mayo. I would argue that it's even better at holding onto the coating. Aside from that all you need to do its cut the tofu into thick strips, pat dry and then dunk into the flour, mayo, and breadcrumbs (in thats order!).

Equipment?

All you will need for this is a baking tray and a knife. If you are making your own breadcrumb then you will also need a blender!


I N G R E D I E N T S

  • 200-250 grams of tofu

  • 1/3 cup of gluten free flour

  • 2 tsp smoked paprika

  • 1/2 cup of mayo

  • 1 cup of gluten free breadcrumbs

M E T H O D

  1. Preheat the oven to 200° Celsius/390° Fahrenheit on bake. Prepare a baking tray with baking paper.

  2. Slice the tofu into thick strips, about 1 centimetre thick. You should get about 12 pieces. Pat dry with a kitchen cloth or paper towel.

  3. Prepare the coatings, on a large plate mix together the gluten free flour, paprika, and a pinch of salt and pepper.

  4. In a bowl, stir the mayo with a splash of water, to make it a slightly thinner consistency.

  5. On another plate, spread out the breadcrumbs.

  6. One by one, dip the strips of tofu into the flour, then the mayo, and then finally the breadcrumbs and lay them onto the baking tray.

  7. Once all the tofu is coated, bake in the oven for 25 minutes of until the breadcrumbs are a nice golden brown.

  8. Enjoy with a satay dipping sauce.
